The hardness of the clutch spring determines whether the mechanism opens the clutch to engage the clutch bell at more or less engine revolutions.
A harder spring will make the clutch "engage" at more revolutions and consequently the bike will start faster from a standstill and you will notice a better acceleration. That is to say a soft spring is as if you start in "second gear", with a hard spring is as if you start in "first gear".
