The stiffness of the clutch spring determines whether the mechanism opens the clutch to engage the clutch bell at higher or lower engine revs.
A harder spring will cause the clutch to "engage" at higher revs and consequently the bike will start faster from a standstill and you will notice better acceleration.
In other words, a soft spring is as if you were leaving in "second gear", with a hard spring it is as if you were leaving in "first gear".
Be careful in your choice because if it is too hard, you need more power and more RPM to start from a standstill.
Polini springs are made of high-carbon silicon alloy steel, heat-treated to resist high temperatures better, and do not lose their power at high temperatures or with use.
