The gear ratios in geared mopeds are extremely important to get the most out of the engine.
A too long gear ratio may prevent you from taking full advantage of the engine's power, and with a too short one, the same can happen. Normally, you should follow some guidelines to choose them.

If you choose a Front sprocket with fewer teeth, you will get more acceleration, but lower top speed. If you choose a larger Front sprocket, you will lose acceleration but gain top speed.

In the case of the rear sprocket it is completely different: if it has more teeth, it means a shorter gear ratio (higher RPM), whereas if it has fewer teeth, it means a longer ratio (higher top speed).
